El Pistolero wines begin in the vineyard where our vines are meticulously maintained to produce superior quality fruit. Lower yields, less water and more sunlight to the fruit through the use of catch wires and aggressive leafing of the vines. All our grapes are hand picked, hand sorted and fermented in small open top fermenters. The grapes are then transferred to small oak barrels for ageing.
Grapes are sourced from the Paso Robles AVA and also the Santa Lucia Highlands AVA in Monterey County.
